While a number of witches appear in Puella Magi Madoka Magica: The Different Story, the vast majority of them remain unnamed. Below are images of the various witches that appear throughout the series in order of appearance.
Unnamed Witch 1
The first witch Mami fights. It shares a similar appearance to Elly. She saves the two new unnamed magical girls from it, giving them the Grief Seed afterwards.

The second witch shown and the first witch Kyoko fights, and looks like a shadowy Minotaur with an axe. The witch of one of the unnamed magical girls from the beginning of the manga. She's the younger sister. She's described as a pin but it's unknown whether that's her witch type.
There's a bonus drawing of the two sisters at the end of the manga. The text alongside them reads: two sisters, both magical girls, and both also witches. The white one is the older sister, and the black one is the younger one. The elder sister captures prey and liquefies it, the younger sister then turns that liquid into nectar. One is a pin, while the other is a pincushion. They'll be together forever, friends forever.
